Ask me

Chances are, if you find your way to this blog, you are interested in Italian cooking. Any time you have a question on something I've said or recommended, or an opinion about Italian food, or a "Can you tell me how to make......?" question, please use the comments section of this post to ask. I'll do my best to give you the most straight forward answer I can, including "I don't know, but I'll find out. "Better than that, I can not do. But here's a tip: I went to Ask Phaedrus to find out how to make an old recipe of my grandmother's that no one alive remembered how she made. They came up with the recipe.

  1. I read an article recently about whether pasta can be cooked in less water than is traditionally used or by putting the pasta in water before turning the fire on. What do you think about this theory?

  3. Anonymous,that is simply not the way to cook pasta. A.Large volume of water B.When water is at a rolling boil, add good amount of salt C. Add pasta and cook till andante.

    Ellen, the recipe was for egg balls, a cheesy and eggy sort of dumpling which Grandma put in her "Sunday" sauce.

  4. About how to cook pasta. I just read the article, sorry for being so late, yet I have my say.
    If we are talking about cooking pasta the Italian way, that's not it. If we want to experiment other ways: all right, but let's not call it Italian pasta.
    I respect the writer's concern about saving energy.
    Coming from a poor Italian family, where everything got saved and recycled, I have a suggestion: pour the hot water in a large container and keep it for washing up. It takes much less soap then non starchy water.
    Thanks for giving me this opportunity.
