We just returned from California. In San Francisco and Carmel we ate in some fine Italian restaurants. The trip and the experience of eating there confirms for me a very basic Italian Grandma principle. A wonderful meal depends on the freshness and quality of the ingredients you use, and the quality of your pantry. Italian cooking is direct and simple.
